Try these recipes for a yummy dinner with plenty of leftovers for tomorrow's lunch. From Tosco Reno's Clean Eating Diet book, the Parchment Halibut recipe (pg. 201) as the main dish with the Sweet Potato Risotto (pg. 215) as the side is a perfect meal that makes you feel good and like a gourment chef! The recipes make enough for four so you have plenty of "clean" leftovers. Careful with the risoto, its so good and the reciepe yeilds so much you may be tempted to go overboard on the portion size.
